The yummy smells around the house from the crock pot is divine on a cold day. I love using the crock pot, but to be honest, most of the time I forget its there because I only use it for Beef Stew or Chicken Casserole. I really need to try out a few more recipes.

Whether you call it a crock pot or a slow cooker, its so super easy … throw it all in & a few hours later you have the most tender meat dish.

I don’t brown my meat before I put it in. I know I probably should. But I usually put it on around 11am so by 5pm its definitely cooked through already. I tend to use the High Setting for the first few hours & then turn it to Low for the last 2 hours & then Warm while I’m cooking the rice. I’ve never had an issue with food not being cooked.

So … heres the recipe I use & my kids absolutely love.

Ingredients

  • 1lb / 454g Lean Beef Stewing Steak
  • 1 large carrot
  • 1 large potato
  • 1 small onion
  • 1 clove of garlic (or a sprinkle of garlic granules)
  • 1 cube of oxo (beef extract used to make stock)
  • 1 teaspoon of Bisto gravy powder (starch to thicken gravy)
  • Water to cover
  • Rice for serving with the Stew
  • Seasonings : Salt, Pepper, Thyme OR use a Savory Beef Stew sachet
  • Optional : 1 stick of celery
  • Optional : 1 leek

Method

As I said earlier, I don’t brown the meat. I put it in first so its at the bottom of the pot & gets cooked thoroughly.

Chop the onion, carrot, garlic & celery & throw it in. I don’t always have celery or leeks in my fridge, so don’t always put it in. My boys don’t like celery or leek much, so I chop it quite fine & they don’t know the difference ; )

Peel & dice the potatoes & place on top. My boys like the potatoes smaller, but I find if they’re too small they disintegrate while cooking. So use your discretion.

Seasonings

I alternate between seasoning myself or using a sachet from a Supermarket for Savory Beef Stew.

Salt, Pepper & Thyme.

I sprinkle an Oxo cube over the meat to give it an extra meaty flavor. Oxo is a dried beef stock cube, but any other beef stock can be used.

1 teaspoon of Bisto gravy powder in a glass of water. This is a potato & wheat starch used to thicken meat juices. I use it to thicken the stew mix as it cooks. I don’t like it super thick, so 1 teaspoon in a few cups of water will just thicken it enough. You can always add a bit more in after a few hours if its not as thick as you like.

And Cook

Pop it all into the pot & throw in some water until its nearly covered all the ingredients. Give it a big stir & put the lid on.

I use the HIGH setting for around 5 hours, then drop it to LOW for 1-2 hours depending on how long it is until dinner time.

About 30 minutes before dinner, I’ll drop it down to WARM otherwise I find its scalding when I dish it up. I’ll then boil the rice for 20 minutes.

Dish up the stew on top of a bed of rice! Job done!
